A Taste of Türkiye at Home

One of the most beloved dishes served at Bazlama since it first opened its doors is their Cheese Turmeric Eggplant dip. This rich dip features three cheeses, roasted eggplant with a light drizzle of olive oil and is best enjoyed with Bazlama bread. The Founder of Bazlama Nurten Anne is sharing her special recipe, so you can have a taste of Türkiye at home.

Ingredients: (makes 1kg of dip)

  • 250 g grated tulum cheese
  • 250 g strained cheese
  • 250 g melting cheese
  • 250 g strained yogurt
  • 2 eggplants
  • 4-5 green peppers
  • 3–4 medium cucumbers
  • 1 small tea glass of olive oil
  • 1 bunch of fresh mint
  • 1 teaspoon turmeric

Preparation:
Roast the eggplants, peel them, and let them drain before placing them in a bowl. Add finely chopped green peppers and cucumbers. Mix in the cheeses and strained yogurt. Finally, sprinkle with 1 teaspoon of turmeric and prepare for serving.

Tip:
To prevent the mezze from discolouring, add the chopped mint 5–10 minutes before serving. When plating, garnish with 3–4 pomegranate seeds (depending on the season) and drizzle lightly with olive oil for a fresh finish.
